Quick & Easy Late Night Meal

Do you ever have one of those nights where you have a million errands to run after work, you finally get home, and before you know it it’s 9:00pm and have yet to eat dinner? That was me last night.

Of course the last thing I wanted to do is cook, ย or settle for something totally unhealthy, so I scoured the fridge for ideas…

I wanted something to bite (you know what I mean? Sometimes a salad just doesn’t cut it); so I created this amazing pizza-esque concoction…

1 mini bagel (2 halves), toasted

1 Laughing Cow Garlic & Herb cheese spread

2-3 Cherry tomatoes, sliced

3-4 Arugula or spinach leaves

Salt & Pepper

This tasty, mini late-night meal…paired with some fresh cherries hit the spot!

Memorial Day Weekend!

Over Memorial Day weekend my boyfriend and I took a trip to Cape Cod to spend some time with friends. I cannot tell you how relaxing, stress-free, and fun of a weekend it was! I wish I did a better job documenting everything, but I’ll share what I do have ๐Ÿ™‚

Still on my eating-well kick, I picked up some health-concious snacks at the gas station while we filled up…

Luckily, we didn’t hit any super crazy traffic, but it was still a long ride. Mike asked me an interesting question and I HAD to get it on camera…

We had another yummy dinner that night- steak tips, creamed spinach, and mac & cheese made from the Boston Market recipe (I think ours turned out better!)

Shenanigans ensued all evening, I wish I could share pictures from our charades game, but this is a group of employed professionals ๐Ÿ˜‰ we’ll keep those memories personal!

The next day we just hung out & enjoyed the day. We took so many pictures, here are a few of my faves ๐Ÿ™‚

Of course dinner was delish- more steak tips, grilled chicken, kielbasa, lobster, mac & cheese, spinach. SO yummm!

I was craving ice cream all day, and we ended up taking a trip after dinner ๐Ÿ™‚ I splurged for a fancy cone with 2 scoops of Oreo Crunch! …What diet..?

Can you tell how excited I was?! lol

We got back that night, and Antonella decided to put her hair extensions on Zack. He looked so funny! All weekend he would randomly sing as if he were a priest, I got a quick video of him singing with his long hair, it’s hysterical!

The next morning we had breakfast together, we took a little ride into town and picked up some sweats. I am in love with my new teal and yellow zip up hoodie!

We all had lunch at this amazing little seafood spot. I wish I took pictures! Lobster rolls and fried clam strips for all. So good!

We started heading back home in the early evening, we hit some traffic but nothing too crazy! Take a peek into our drive home; can’t you tell Mike loves it when I put a camera in his face? LOL ๐Ÿ˜‰

Memorial Day weekend was amazing! Good company, good food, good fun. It was so nice to just relax. I think 3 day weekends should be mandatory once a month! ๐Ÿ˜‰

Fruits & Veggies Made Easy

Just yesterday I embarked on a three 3 week effort to get in great shape before Memorial Day weekend. I’m trying to increase my physical activity, and get myself on a strict, fruits/veggies/protein only diet (bye bye carbs :(). One day down, and I’m feeling great!

I have no problem eating healthy, I just don’t like how it always seems to be so inconvenient to do so. Whenever I feel a healthy streak coming on, I get ambitious and buy a ton of fruits & veggies- but many times they end up going bad because I’m too lazy to cut them up or wash them when I’m in the mood to snack- and in turn I end up eating junk food #fail.

I recently discovered a way to avoid that problem, so I spent Sunday afternoon doing just so…

I picked up celery, carrots, watermelon, and grapes (not pictured) for the week…

I pre-washed, cut and bagged everything!

Now my fridge is stocked with fruits and veggies, ready at my fingertips. It makes healthy snacking at home much easier, and packing a healthy lunch simpler as well. I’m ultimately saving money since nothing goes to waste, I’m filling up on healthy foods, and not feeling as guilty about snacking since I’m avoiding more tempting, junk food options.

I wish I were this ambitious about healthy eating all of the time, but you never know- maybe it’ll become routine and stick. Here’s to hoping!

I am so excited about this post for a variety of reasons. First off… does anyone listen to the Elvis Duran show in the morning? I tune in on my way to work every single day, and it really is the most entertaining program on the radio, I love starting my mornings with that crew!

Back in December or so everyone on the show was tasting and raving about these amazing cupcakes and truffles! They mentioned that she sold her truffles online and I was dying to check them out. Once at a computer, I immediately found her website and looked through all of the delicious treats she had available. I hate to admit that I never ended up ordering any… but was thrilled when I heard she was opening up a shop in Avon, CT…which happened to be very close to where I currently live.

I’d been following Miriam, the owner/designer/baker extrordinaire on Twitter and Facebook for a while now and have been completely blown away by the legitimate food porn that she creates and posts on a daily basis.

Taste by Spellbound has officially been opened for less than a month, and I finally made the trip to check it out!

I must say, I truly admire Miriam for a number of reasons…

1- She has a kick a** style. Holy moly, this girl has such a unique but elegant/feminine look…not to mention she has mastered the perfect top knot/ bun!

2-She is so ambitious, a risk taker, and go-getter.

3- She is beyond talented. Let her desserts speak for themselves…you ย can honestly tell how amazing they are just by looking at them.

We picked up a little bit of everything
TJ's Carrot Cake. I honestly don't even like Carrot Cake- but I have heard so many people rave about this particular cake that I had to try...and oh my goodness, I've officially been converted! The cake was so moist and the icing was incredible, it was a stellar combination and I'm proud to say this was the first piece of carrot cake (in my life) that I honestly enjoyed!
We had to sample some truffles! Dark chocolate, carrot cake, and red velvet. They were all just as delicious but the dark chocolate was my absolute favorite!
Mike was so excited about the red velvet truffle- it's one of his favorite flavors.
Now that I was a carrot cake lover, I couldn't wait to try the carrot truffle! (Excuse the dead flowers in our apartment lol)

Mike was so obsessed with this strawberry cinnamon cupcake, he swears it was the best he's ever had...I took a bite and I can't disagree...that icing is something else! I can't wait to try some other flavors ๐Ÿ™‚

I was so glad to finally visit this charming place! Everything was truly delicious and I will surely be back! (I’m dying to get my hands on one of her famous salted caramel cupcakes!)

Hunger Games & Dish N Dat

Last Saturday I was beyond excited to see The Hunger Games!

I went with my boyfriend, Mike, and we ran into a couple of my girlfriends…which is always exciting! Personally, I was completely satisfied with the films rendition of the novel. It’s hard to recreate every detail word for word, but what the directors chose to omit was not missed! If you have yet to see this film- GO!

After the movie, we were trying to decide where to go for dinner- Mike insisted on pancakes, but we wanted to go somewhere other than our usual diner. I sent out a tweet asking if anyone knew of any great pancake spots in our area…

This is why I LOVE twitter!

Twitter can be a really useful tool…not only did I find a great spot to get late night pancakes, I ALSO found a new blow dry bar that will be opening in West Hartford! Thank you, Stacey!

We decided to go to Dish N’ Dat, seeing as it wasn’t too far away, and what a cute little spot it was. I can’t believe I’ve never been! You walk in and there is this huge wall of spoons…

So crazy!

The restaurant was basically a fun twist on a traditional diner.

They even had a full bar on the other side of the restaraunt.

So we sit down, and start looking through the ginormous menu…I literally wanted to eat everything, something about a diner menu…

I'm always a breakfast girl ๐Ÿ˜‰

Everything sounded so good. We started with an order of Fried Mac & Cheese balls, neither of us had ever had them…

Has anyone ever had these??

They were so darn delicious, that I had to stop myself from eating half the plate. I’d really be curious to see how they’re made…

YUM!

So dinner came out soon after- I went with their eggs benedict (guilty pleasure) their rendition had spinach in it as well…basically eggs florentine. Even better ๐Ÿ™‚

I love when they use the big fluffy english muffins! ๐Ÿ™‚

Mike ended up ordering this crazy burger (so much for pancakes!)

I don't know how he ate it...

It was a burger topped with pulled pork, bacon, cheese and lord knows what else. That was just a little too much meat for me…but he loved it!

It was definitely a fun place! I can’t wait to go back…next time we’ll have to order pancakes ๐Ÿ˜‰
