Friday night my boyfriend and I went to Randy’s Wooster St. Pizza in Manchester. Seeing as we are currently in the middle of lent, pizza was the perfect dinner choice for those who abide by the no meat rule (me!)
We got there and had a little bit of a wait so I started snapping some pictures š
An older couple thought we were on our first date...no we're just always laughing and snapping pictures, Sir lolBalloon to the face...I don't really get it lol...
Once we were seated we decided to kill some time with the cup of crayons on our table š

We ordered a couple sodas (I know! I felt like SUCH a cheater, but I was craving a diet coke…and water does not pair well with pizza), and our large pizza. I flipped the menu to see if they had any yummy dinner salads when I saw THEM….. Mike knew the deal, so we got an order of…

I am OBSESSED with fried pickles, and O-M-G these did not dissappoint…we put a good dent in the plate š

We were legitimately stuffed, but had plenty of leftovers to take home (you better believe I had fried pickles for breakfast Saturday morning).

In honor of the 100th Birthday of the OREO- I wanted to share a recipe that I made last week in honor of National Pancake Day! (This was inspired by my amazing foodie friend, Kathleen)
Oreo Pancakes! They’re quite simpleā¦
1) Start by mixing your pancake batter…
If you perfer to use a homemade batter- more power to you! "Just Add Water" is my jam...
Ā 2) Crush up your favoriteĀ Oreos (I used minis š )…
Ā
3) Mix into batter…
4) Spray pan or griddle with cooking spray/pad of butter, then pour your pancakes!
5) Flip when the bubbles on the top have popped (I’m SURE you all know how to make pancakes ;))…
6) Add butter, syrup, confectioners sugar and serve!
These were SO tasty!
How could you not LOVE Oreos? I must say, I make a pretty mean Dirt Pudding as well!
Happy March everyone! Can you believe how quickly February flew by!?
Like I did at the beginning of last month, I’m going to go through my New Years Resolutions to see that I’m staying on track. š
Here we go!
1:Ā Stop Cursing. Better, but overall… Fail.
2:Ā Exercise regularly. Starting to slack, but still making the effort.
3:Ā Eat healthier. This has definitely been my best resolution! Complete success!
(Although I did put quite a dent in a box of Valentines Day chocolates …)
4:Ā Stop spending so much money and start saving more. Done, and done. My only credit card was completely paid off, and I’ve been able to save quiet a bit of money this month.
5:Ā Make an effort to spend more time with friends: A little tricky this month with my out of town friends, being in the Bahamas threw me off a bit, but plans are in the works for the near future š
6:Ā Spend more time reading. Being on vacation was the perfect kick in the butt! I finished The Hunger Games, and The Lies That Chelsea Handler Told Me. When I got home, I couldn’t wait to start Catching Fire!
7:Ā No more soda. Ā Although I had some moments of weakness, and would have given my left leg for a diet coke, I am still 100% clean š
8:Ā Eat out less and cook more. Yes, and yes!
Overall, I’ve been pretty successful with my resolutions, and it’s amazing. I feel so productive with my time, much healthier with food choices, and far smarter with my money. I’m really proud of myself and have started to indulge here and there, taking stabs at my growing want list, and planning some vacations š
While I’m not the biggest Football fan I do enjoy watching the Superbowl. Seeing as my entire family is made of Giants fans, this one was extra special. I spent Superbowl XLVI at my parents house relaxing, eating and enjoying some time with everyone. (I was not going to take any chances watching this game with my die-hard Giants fan of a boyfriend, he was halfway across the state doing whatever it is he does lol).
My Mom, and sister were so cute in their Giants gear! I love that my Mom wore her heeled clogs, I would have done the same š
The girls spent the day Ā cooking and baking some yummy treats for the family. We had so much food, I had to take some pictures of my favorites!
My Mom made mac and cheese (my absolute favorite), the most tender pulled pork and she totally outdid herself with a serious nacho platter.Ā My sister and I made a dirt pudding (vanilla pudding mixed with cream cheese, butter, cool whip, and Oreos).
We made another special dessert in honor of Eli- seeing as Ange (Mom) is obsessed with him! Every time he’s on screen she says “I LOVE Eli…he’s such a nice boy!” So of course we had to make his favorite cookies! Eli’s Mom makes himĀ “Lace” cookies whenever he visits home, and I can see why- they were SO good!
They are very thin, crispy, oatmeal, brittle-like cookies. We made 6 dozen, and they were such a hit. I honestly cannot wait to make them again!
Whenever I’m home I’m always playing manicurist. I gave my Mom and sister gel manicures- Katherine got the sweetest Valentines Day inspired mani!
We had a really nice time, I love being with my family. Plus the GIANTS won! š
Happy February everyone! I apologize for not blogging all week, I’ve been super busy, and a little under the weather- but I’m back š
I decided that at the beginning of each month, I would go through my New Years ResolutionsĀ and note how well, or how poorly Iāve been maintaining them. I think itās a good way to keep myself in check when it comes to sticking to my goals. So here we go:
1: Stop Cursing. Unfortunately, this one has been really difficult for me. I have been making the effort, but sometimes it just slips. However, each time I slip I do catch myself and note how horribly I am at sticking to this resolution. LOL… Ā Itās a work in progress.
2: Exercise regularly. This has been pretty good! Iāve definitely been making a conscious effort to get some sort of physical activity into each day. Some days are better than others, and yes I have skipped a few here and there, but overall Iām proud of myself for the increased physical activity.

3: Eat healthier. This may be my best resolution! Iāve been eating super healthy M-F. Iāve been allowing myself to cheat on the weekends,Ā but as the weekends go by I find that I am not as eager to eat junkĀ because I really have noticed a difference in the way my body feels.
I've been making much healthier lunches and eating SO much fruit! Yumm š
4: Stop spending so much money and start saving more. I definitely have! I try not to spend any money during the week on āthingsā (random trips to CVS, Marshalls, Target, etc.) I do allow myself to spend if going out for an occasion or on groceries. I keep adding to my want listĀ and chip away at it on the weekends or wait until I absolutely need something. I’ve also made the effort to force myself to put money aside from each paycheck-I started looking at it as another bill.
5: Make an effort to spend more time with friends: So far so good! This month, I met my best girls from home for dinner, as well as my Kappas- (the class I was initiated with in my sorority). Weāre all so busy and live across the state, but by planning ahead, weāve all been able to follow through with plans. š

6: Spend more time reading. I wish I could say I was doing this! Honestly, I donāt think I picked up a book for more than an hour this month. Iāve read a ton of magazinesā¦.but I donāt really think those count. This month Iāll need to work on upping my literature.
7: No more soda. Hell, my name is Amanda and I am soda-free. Not a sip. š
Water-all day everyday š
8: Eat out less and cook more. Done and done! I pack a healthy lunch for work everyday, and try to cook dinnerĀ M-F. It helps me to save money during the week and eat healthier- so by doing this I am contributing to two of my other resolutions as well!
And of course, one of my resolutions was to start and maintain a blog. I think I’ve been doing a decent job. I’ve tried to make an effort to post every night, but some days are just far too busy. I think this will be by 26th or 27th post? So that’s not too bad out of 31 days!
