Tasty Apple Recipe!

A few nights ago I tweeted a picture of one of my favorite treats! I first made these in my 3rd grade classroom & they quickly became a go-t0 snack for me. What I most love about them (aside from the fact that they are delicious), is that they take literally 5 minutes to make and I usually always have the ingredients on hand. Who doesn’t love a recipe like that?!

What you’ll need:

1 Apple

Cinnamon

Sugar

Cheddar Cheese

Butter

Slice your apple and arrange on a piece of foil
Sprinkle apples with cinnamon and sugar
Add cheddar cheese and a small pad of butter to each apple
Pop into the oven & broil for 2-5 minutes, or until all of the cheese is melted

And that is it!

It seems like an unusual combo, and obviously not the healthiest of foods… but hey, there is an apple in there, and I promise these are absolutely delicious!

Happy 100th Birthday to the Oreo!

In honor of the 100th Birthday of the OREO- I wanted to share a recipe that I made last week in honor of National Pancake Day! (This was inspired by my amazing foodie friend, Kathleen)

Oreo Pancakes! They’re quite simple…

1) Start by mixing your pancake batter…

If you perfer to use a homemade batter- more power to you! "Just Add Water" is my jam...

 2) Crush up your favorite Oreos (I used minis 😉 )…

 

3) Mix into batter…

4) Spray pan or griddle with cooking spray/pad of butter, then pour your pancakes!

5) Flip when the bubbles on the top have popped (I’m SURE you all know how to make pancakes ;))…

6) Add butter, syrup, confectioners sugar and serve!

These were SO tasty!

How could you not LOVE Oreos? I must say, I make a pretty mean Dirt Pudding as well!

One of the yummiest desserts I’ve ever tried…

If you follow me on Twitter, you may have seen me tweet that my office building had a pot luck lunch this afternoon. We love doing this once a month or so. This time around, we tried to all bring something healthy. Unfortunately, the office downstairs didn’t get the memo, and one of the women made the most incredibly, sinful desserts I have ever tasted.

She brought these amazing home made oatmeal/apple cheesecake bites; I asked her for the recipe and she gave me a quick step by step of how she created this masterpiece….

Mix a batch of oatmeal cookie batter

Lay it in the bottom of a baking tray

Mix together 2 packages of Philadelphia Cream Cheese, some cinnamon, and powdered sugar

Lay mixture over oatmeal cookie batter

Thinly slice apples (or pears, peaches…any fruit) and sautee in butter/cinnamon for a few minutes until soft

Lay apple sizes on top of cream cheese

Refrigerate & slice

I totally ignored my effort to eat healthy during the week by having one of these this afternoon, but it was so worth it; and I learned a great new recipe!
