Skinny Spinach Lasagna Rolls

I was all gung-ho on my healthy eating spree in May/June, but have been slacking the past few weeks (mozzarella sticks for dinner 3 night in a row anyone?!)

Mmmm…look away, look away!

No more fried cheese…it’s time to get back on track! I looked up some new, healthy recipes for lunch & dinner, made my shopping list, hit up the grocery store, and filled my cart with all the colors of the rainbow!

I found a great recipe for spinach lasagna rolls, and decided to make them for dinner tonight. This may very well become one of my go-to dinners! Check out the recipe below 🙂

Spinach Lasagna Rolls
Servings: 9 • Serving Size: 1 roll
Calories: 224.9 • Fat: 5.1 g • Fiber: 3.4 g • Protein: 13.0 g • Carbs: 31.5


9 lasagna noodles, cooked

10 oz frozen chopped spinach, thawed and completely drained

15 oz fat free ricotta cheese

1/2 cup grated Parmesan cheese

1 egg

salt and fresh pepper

32 oz. tomato sauce

9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

1) Boil lasagna noodles according to package (I cut this recipe down to make 4 rolls)

2) Chop & thaw spinach

3) Combine spinach, ricotta, egg, and parmesan in mixing bowl

4) Lay noodles out on wax paper or aluminum foil and dry completely

5) Add spinach mixture to each noodle

5) Cover the bottom of a baking dish with sauce, roll each noodle and place (fastened side down) into dish

6) Top each roll with sauce and shredded mozzarella

7) Cover dish with foil and bake at 350* for about 40 minutes

8) Let cool, plate, and enjoy!

Hunger Games & Dish N Dat

Last Saturday I was beyond excited to see The Hunger Games!

I went with my boyfriend, Mike, and we ran into a couple of my girlfriends…which is always exciting! Personally, I was completely satisfied with the films rendition of the novel. It’s hard to recreate every detail word for word, but what the directors chose to omit was not missed! If you have yet to see this film- GO!

After the movie, we were trying to decide where to go for dinner- Mike insisted on pancakes, but we wanted to go somewhere other than our usual diner. I sent out a tweet asking if anyone knew of any great pancake spots in our area…

This is why I LOVE twitter!

Twitter can be a really useful tool…not only did I find a great spot to get late night pancakes, I ALSO found a new blow dry bar that will be opening in West Hartford! Thank you, Stacey!

We decided to go to Dish N’ Dat, seeing as it wasn’t too far away, and what a cute little spot it was. I can’t believe I’ve never been! You walk in and there is this huge wall of spoons…

So crazy!

The restaurant was basically a fun twist on a traditional diner.

They even had a full bar on the other side of the restaraunt.

So we sit down, and start looking through the ginormous menu…I literally wanted to eat everything, something about a diner menu…

I'm always a breakfast girl 😉

Everything sounded so good. We started with an order of Fried Mac & Cheese balls, neither of us had ever had them…

Has anyone ever had these??

They were so darn delicious, that I had to stop myself from eating half the plate. I’d really be curious to see how they’re made…


So dinner came out soon after- I went with their eggs benedict (guilty pleasure) their rendition had spinach in it as well…basically eggs florentine. Even better 🙂

I love when they use the big fluffy english muffins! 🙂

Mike ended up ordering this crazy burger (so much for pancakes!)

I don't know how he ate it...

It was a burger topped with pulled pork, bacon, cheese and lord knows what else. That was just a little too much meat for me…but he loved it!

It was definitely a fun place! I can’t wait to go back…next time we’ll have to order pancakes 😉
